Directions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the halved Roma tomatoes, extra virgin olive oil, sliced garlic, Minotaur Salt-Free Mediterranean Herb Blend, and salt. Toss everything together until the tomatoes are well coated.
Spread the tomato mixture in a single layer on a large baking sheet, cut side up. Make sure the tomatoes are not overcrowded to ensure even roasting.
Roast the tomatoes in the preheated oven for 25-30 minutes, or until they are soft and starting to caramelize around the edges, and the garlic is golden brown and fragrant.
Remove the baking sheet from the oven and let the tomatoes cool slightly.
Transfer the roasted tomatoes to a serving dish, drizzle with any remaining olive oil from the baking sheet, and sprinkle with chopped fresh basil before serving.
