Killer Chicken Broccoli Skillet

Ingredients

  • 4 bone-in chicken thighs or drumsticks

  • 2 cups broccoli florets

  • 1 medium onion, diced

  • 1 medium red bell pepper, sliced

  • 4 cloves garlic, minced

  • 1 cup chicken broth

  • 1/4 cup soy sauce

  • 1 can (14.5 oz) diced tomatoes

  • 2 tbsp Chicken Infused Coffee Rub

  • 1 tbsp Lookout Cajun Spice Blend

  • 1/2 tsp Death Chocolate Habanero Spice

  • 2 tbsp olive oil

  • salt to taste

  • pepper to taste

Directions

  1. Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil. Once the oil is shimmering, season the chicken thighs or drumsticks with salt, pepper, and 2 tablespoons of Chicken Infused Coffee Rub.

  2. Place the chicken skin-side down in the skillet and sear for 5-7 minutes until golden brown. Flip and sear the other side for an additional 5 minutes. The internal temperature should reach 165°F (74°C). Remove the chicken from the skillet and set aside.

  3. In the same skillet, reduce the heat to medium and add the diced onion, sliced red bell pepper, and minced garlic. Sauté for 3-4 minutes until the vegetables are soft and fragrant, stirring occasionally.

  4. Add the broccoli florets to the skillet and cook for another 2 minutes, stirring until they are bright green and tender-crisp.

  5. Pour in the chicken broth, soy sauce, and diced tomatoes with their juice. Stir in the Lookout Cajun Spice Blend and 1/2 teaspoon of Death Chocolate Habanero Spice for a kick. Bring the mixture to a gentle simmer.

  6. Return the chicken to the skillet, nestling it among the vegetables. Cover and let simmer for 15-20 minutes, allowing the flavors to meld and the chicken to finish cooking through.

  7. Taste the sauce and adjust seasoning with salt and pepper if necessary.

  8. Serve the chicken hot, spooning the delicious sauce and vegetables over the top.
