1 tbsp Fish Coffee Rub with Rosemary and Orange Infusion

Directions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the sliced zucchini, olive oil, minced garlic, chopped thyme, Fish Coffee Rub with Rosemary and Orange Infusion, salt, and pepper. Toss until the zucchini is evenly coated with the mixture, about 1-2 minutes.
Spread the zucchini in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20-25 minutes, turning halfway through, until the zucchini is golden brown and tender, with caramelized edges. You’ll know they’re ready when they are fork-tender and smell fragrant.
Once roasted, remove the zucchini from the oven and drizzle with fresh lemon juice. Toss gently to combine. Serve warm as a delightful side dish!
